One-pan cheese and bacon smothered chicken

Ingredients for One-pan Cheese and bacon smothered chicken

  • 500g packet of small white potatoes
  • 1/4 cup of olive oil
  • 2 large chicken breasts (about 550g), halved lengthways
  • 200g short cut bacon, chopped
  • 200g button mushroom, halved
  • 2 leaks, halved lengthways, thinly sliced
  • 1/3 cup of white wine or chicken stock
  • 1/3 cup of thickened cream
  • ¾ cup of grated mozzarella
  • Fresh parsley, chopped

Instructions for One-pan cheese and bacone smothered chicken

Step 1

Microwave or boil potatoes.

Meanwhile, heat 1 tbsp oil in a large ovenproof pan over high heat.

Season chicken & cook, turning, for 4-5 minutes or until browned and almost cooked through.

Transfer to a plate. Add remaining oil & the bacon.

Cook, stirring, for 2 minutes or until golden. Add mushroom and leeks.

Cook, stirring for 6 minutes or until golden.

Transfer to a bowl.

 

Step 2

Add wine or stock to pan.

Cook, scraping to dislodge any stuck-on bits, for 1 minute.

Add cream & any chicken juices.

Simmer for 2 minutes or until thickened slightly. Transfer to a jug.

 

Step 3

Halve each potato and place in pan. Preheat oven grill to high.

Top potato with half the leek mixture & the chicken.

Pour in cream mixture.

Sprinkle with cheese.

Top with remaining leek mixture.

Grill for 3-4 minutes or until golden. Sprinkle with cheese.

Top with remaining leek mixture.

Grill for 3-4 minutes or until golden.

Sprinkle with parsley to serve.
